Lunch with an old friend.

Hi Everyone, had lunch with an old friend that I hadn’t seen in some time today.  She had been travelling for about a year and a half and had many tales to tell.  I fed her a lunch of some of the wonderful salmon that Pete smoked yesterday along with sour cream, champagne dill mustard, sliced shallots and capers, very yummy and home made cream of asparagus soup.  She cleaned her plate  and made lots of yummy noises so I guess she enjoyed it!  Here’s the recipe I like for cream of asparagus soup:

12 oz. or 350 grams of asparagus

3 cups of vegetable stock

1/4 cup of butter

1 onion, chopped

3 tbsp. all purpose flour

1/4 tsp. fresh ground coriander seeds

1 tbsp. lemon juice

2 cups milk

4-6 tbsp. heavy or light cream

salt and pepper

chopped fresh coriander for garnish

Trim the asparagus removing the woody ends, cut the remainder into about 1 inch lengths reserving the tips for garnish.  Cooks the tips in salted water for about 5 minutes, drain and set aside.  Put the rest of the asparagus in a saucepan with the stock and bring to a boil, cover and cook for 20 minutes or until asparagus is very tender.  Drain, reserving the stock.  Melt the butter in a saucepan, add the onion and cook until tender but not coloured, stir in flour and cook for another minute.  Whisk in the reserved stock a little at a time and bring to a boil.  Simmer for about 5 minutes until thickened then stir in asparagus (not the tips) coriander, lemon juice and salt and pepper to taste.  Simmer for another 10 minutes or so and remove from heat.  With an immersion blender, blend until smooth, add the milk and reserved asparagus tips and bring to a boil, simmer for 5 minutes.  Stir in cream, garnish with chopped fresh coriander.  Enjoy!

    I just love how you tell the story and then provide us with a terrific recipe for a yummy soup. Looking forward to reading more food tales & recipes…and seeing delicious food pics of course.
